Niederegger Purity Regulations

The name 'Niederegger Marzipan' stands for dedication to quality. Since 1806 only carefully selected ingredients have been refined to produce our extra special marzipan, which stands out from the rest.

The secret of the traditional recipe for Niederegger Marzipan lies in the precise proportions of almond to sugar and an ingredient similar to rosewater. Even today, the master confectioner personally supervises production.

The essential ingredient in marzipan is the almonds, and without exception Niederegger uses only aromatic Mediterranean almonds and carefully selects the best type of almonds and the best area of cultivation. By making our purchases in person from Spain, Italy and other Mediterranean countries, we ensure that only best quality raw materials are imported to Lübeck. In this way Niederegger ensures that its products consistently meet the highest standards.

Marzipan is a fresh product!

The marzipan paste is produced using traditional methods: a mixture of almonds and sugar is grinded down and roasted in a cauldron over a naked flame. Following a resting period, the marzipan can be molded and can be decorated using food dyes, or is coated with various types of chocolate.

The ingredients are what count most of all!

  • almonds (Mediterranean almonds)

  • sugar (EC class 1)

  • ... and a little secret

  • additional fresh ingredients: exquisite chocolate, fine quality butter, cream, natural flavorings, fresh pistachio nut kernels and natural fruit pulp.

What does the expression '100% quality marzipan' paste mean

Niederegger produces their own marzipan. To produce the marzipan paste, a mixture of almonds and sugar is ground down and traditionally prepared in a roaster over a naked flame. Following a resting period, the marzipan can be molded and can be decorated using food dyes, or is coated with various types of chocolate. Niederegger does not buy the marzipan paste as other manufacturers do, but produces the paste itself

The Qualities of Marzipan - Niederegger Marzipan (100%)

Niederegger Marzipan from Lübeck is produced from 100% marzipan paste and 0% added sugar.

The Qualities of Marzipan - Lübeck Edelmarzipan (90%)

In contrast, Lübeck Edelmarzipan consists of 90% marzipan paste and 10% added sugar (this is the minimum standard required to achieve Lübeck Edelmarzipan status). In addition to the 90% marzipan paste, 10% pure sugar may be added, resulting in a finished product consisting of 41.5 % sugar.

The Qualities of Marzipan - Edelmarzipan (70%)

A 70% to 30% ratio defines what is known as Edelmarzipan (also the minimum requirement for Lübeck Marzipan).  30% added sugar !

The Qualities of Marzipan - Marzipan (50%)

Legally, even a 50% to 50% ratio may carry the description of 'marzipan' (marzipan for consumption). In this case, the product consists of 50% marzipan paste, which in itself already contains 35% sugar, in addition to a further 50% pure sugar; therefore the finished product contains 67.5% sugar.

 

Traditional Production Methods

In addition to carefully selecting the finest ingredients, the high quality of marzipan can only be ensured by employing the optimum production process; this is why the quality of Niederegger Marzipan surpasses any other

Once the Mediterranean almonds have been combined with the sugar, the mixture passes through a series of granite presses before reaching the traditional roasting cauldrons. This roasting process develops the aroma and at the same time conserves the mixture. Then that secret ingredient is added, which sets Niederegger Marzipan apart from the rest.

During the molding process, the paste is formed into the characteristic loaf, heart or classic shapes. At this stage, some varieties will also be filled before finally being coated in chocolate. The combination of production processes which have been handed down for generations and state-of-the-art production lines guarantee Niederegger Marzipan's consistent quality and its impeccable characteristic flavor.

During the course of time, the Niederegger bakery of the past has become a modern, exemplary marzipan factory. Every day, up to 30,000 kg of exquisite marzipan is produced, packed and distributed; our production and storage area covers approximately 25,000 square meters and our production lines are 70 meters long
